Anacortes winter market:
Feb 8, Mar 14, Apr 1
Earthy flavor and meaty texture. Shiitake is a mushroom for every dish.
Likened to a sweet crab or lobster taste that is sought after by chefs and enthusiasts alike.
Pleurotus ostreatus +
Great mild flavor, slightly sweet and and a hearty meaty texture.
Maitake has a bold savory flavor profile with a tender texture (and is my favorite!)
The FARM is located in the Skagit Valley north of Sedro-Woolley on highway 9. We lease space on 10 acres in the shadow of Lyman Hill. In 2014 Mark, the S.G.M. founder, visited the property, there was a 25 x 40 greenhouse with 5 foot tall weeds, no end walls and, in his eyes, it was ready for a mushroom farm to be constructed within it! The greenhouse now has multiple grow rooms built inside to cater to each varieties specific temperature, humidity and light preferences. We have a cold oyster room which grows our Blue, Black, and Tree oysters. We have a hot oyster room for our Golden and Pink varieties and another room that we grow our Lion’s Mane, Cinnamon Cap, and Pioppini in. Also housed within the Greenhouse walls are the inoculation room and the incubation room. Attached to the south side of the greenhouse is a 25’ x 15’ covered workspace where we sterilize our substrate. In addition to all of this we have a 20’ shipping container where we grow our Shiitake varieties. We have come a long way, and are continually evolving to make room for more mushrooms!
Like most passions that turn from dreams to reality, its hard to trace a concrete course. SGM founder Mark Rickard does recall countless hikes in forests across the states with his mother who is a plant pathologist. She lovingly shared, sometimes too much, her detailed grasp of the natural world. Plant knowledge, gardening, tree pruning, and landscaping became some of Mark’s outlets. As a classically trained pianist he also knows the value of blending technical with art. A certainty in his life was spending as little time indoors as possible and a deep and burgeoning interest in the farm to table movement.
SGM now takes great joy in offering an exceptional product to the Pacific Northwest where we thrive. Dedication to sustainable organic practices that enrich the earth will always be our priority; followed by the pleasure of delicious gourmet mushroom-centric meals.
